How long to set up?

Super easy. The frame expands and clicks into place. The top folds open, then snap onto the frame. Reverse to disassemble.

Is this a proper height for eating while sitting down?

There're 3 sizes for choosing from, the large size is 15.5" high, the medium size is 17.7" high, and the small size is 12.2" high. If you're in a camping chair, the height should be fine.

Can I put a hot pan on top of the surface of this table when I'm switching Trangia pans?

This tabletop is made of aluminum so that you can put a hot pan on the table. Just avoid the edges where the hard plastic caps are located.
